Double Dark Chocolate Pecan Cookies

During the holidays, we are always looking for new cookie recipes to enjoy. Here is one that we really love. These cookies are almost cake-like and are very rich in dark chocolate and nuts. If you don’t care for dark chocolate, you can substitute regular cocoa powder and semi-sweet or milk chocolate chips. Also, walnuts can be substituted for the pecans if you like.

Double Dark Chocolate Pecan Cookies
For me, it makes over 4 dozen!

1 cup sugar
3/4 cup (1 1/2 sticks) butter, melted
1 egg
6 tablespoons dark chocolate cocoa powder
1/2 cup milk
1 teaspoon vanilla extract
2 cups flour
1/2 teaspoon baking soda
1/2 teaspoon salt
1 cup chopped pecans
1 1/2 cups dark chocolate chips

Preheat oven to 375 degrees F.

Combine sugar, melted butter, egg, cocoa powder, milk, and vanilla in mixing bowl. Mix well. Stir in flour, baking soda, salt, pecans, and chocolate chips.

Drop by teaspoonfuls onto baking sheet pan lined with parchment paper or well-greased (or they will stick).

Bake for 6-8 minutes and let sit on pan for a couple of minutes to finish baking if needed. Remove to cooling racks and cool.

Enjoy warm with milk or ice cream. Yum!

*Note: They are very dark, almost black, due to the dark cocoa powder.
